2 tablespoons plus 2 teaspoons Thai red curry paste3/4 cup light coconut milkOne package silken tofu, at room temperature1/4 cup fresh cilantro leaves In a medium pot over medium heat, heat the oil until shimmering. Add the shallot and cook, stirring, until softened, about 3 minutes. Add the curry paste and ginger and cook, stirring, until aromatic, about 20 seconds. Add the broth, bring to a boil, then reduce the heat to medium-low and simmer until the broth reduces slightly, about 10 minutes.
