Hidden speakeasy specializing in cold seafood and cocktails reopens in Montrose

Cantarito cocktail: Arette Reposado, Del Maguey Vida, lime, orange, grapefruit, Squirt and salt on the menu at Quiote is a hidden bar inside Toasted Coconut on Thursday, Aug. 18, 2022 in Houston.Back in early 2020, Martin and Sarah Stayer quietly opened Quiote inside their tiki-inspired bar the Toasted Coconut as a place Houstonians could only hang out if they secured an invitation.

The married couple, who are behind the popular Nobie’s restaurant, always intended to reopen Quiote. But between pandemic regulations and finding employees, it was too challenging to reopen an intimate, 14-seat bar until now, Martin Stayer said.A two-year break gave the Stayers a chance to fine tune the menu with new hires. A Mexican chef no longer runs the kitchen but Madalyn Lester, an alum of Nancy’s Hustle, worked with Stayer on the eight-item menu.

“I felt like years ago if you had a bar with craft ice and cocktails, you were a step above everyone else,” said Stayer. “But that’s the expectation now and if you don’t have those things, it’s like, ‘What are you doing wrong?’”
