The chef learnt how to cook Hainanese chicken rice from the late Kiang Joon Toh, fondly known as chicken rice maestro Sergeant Kiang, and partnered BreadTalk Group to set up his own eatery.
A new chicken rice joint is opening in Tiong Bahru, and it’s helmed by an apprentice of famed chicken rice chef Kiang Joon Toh. Fondly known as Sergeant Kiang as he worked as a cook for the British Army in the ’60s, the late Mr Kiang was the co-creator ofPrior to his passing, he had been running his Sergeant Chicken Rice chain at BreadTalk Group’s Food Republic food courts since 2005.
Initially, chef Chuan was stationed at the food court’s dessert stall and Toast Box cafe, but was soon transferred to assist Sergeant Kiang at his Sergeant Chicken Rice stall. For the next one year, he learnt how to cookfrom Sergeant Kiang, and was later tasked to help set up a second Sergeant Chicken Rice stall at Food Republic’s Suntec City outlet.This year, chef Chuan is partnering with BreadTalk Group to open his own chicken rice and zi char brand called.
