Black-eyed peas are only part of the New Year’s Day tradition.

Custom also holds that for the promises of riches in the coming year, a body needs to consume at least a fork-full or two of some sort of greens.

What sort of greens is open to interpretation. But the custom in the South has been to incorporate some sort leafy, dark collard greens into the menu.Collards are a staple of the Southern sideboard every fall and winter and have been for as long as anybody can remember. They grow well in the rich, loamy soil of their region and rich and poor alike enjoy their distinctive flavor with impunity.

Here’s the thing, though: If you plan to have collards you need to make sure that you remove as much of that aforementioned rich and loamy soil as possible before cooking. That means rinsing them repeatedly in cold water until they are free of any annoying grit. And by repeatedly I mean a whole lot, so much that you think that you are overdoing it.Here is a recipe that I have had for a long time. It’s one that I adapted from the editors at America’s Test Kitchen.
