We don't eat beef so I always look for new ways to cook chicken and pork. Happened on this recipe and it's great. But I can't ever follow a recipe to the letter. First, time is precious so I look for things I can prep in 30 min or less with 10 ingredients or less . I had chicken breast but no thighs. I had brussels sprouts but no carrots. I had dried herbs so used a mix of herbs instead of thyme. Otherwise, I followed the recipe. I live at 7500' so cook time had to be adjusted.

Put the brussels around the chicken on the baking sheet and drizzled with olive oil as instructed. Reduced the temp to 350 after 20 min and added 5 min to the cook time and broiled it to crisp at the end. The chicken was perfect, crusty outside, perfectly done and moist & tender inside. The big surprise was how wonderful the brussels were. Crisp and brown on the outside but perfectly done and flavorful inside. Next time, I will salt the brussels before cooking.
