We made s’mores into cookies. Because July.
It's almost a law of nature: You can't have a campfire without roasted marshmallows. And you can't have roasted marshmallows without someone wanting to make s'mores.
But it's time for some s'mores real talk. They might be gooey and chocolatey in your memories, but in reality? A s'more is almost never as good as you want it to be. Those boxed graham crackers are usually either too hard, making them hard to bite through, or stale or soggy from time spent in the cooler or someone's car trunk.
And then there's the chocolate. When does that thick piece of bar chocolate ever completely melt? Never. That's when. But we were convinced that the childhood s'mores could be transformed into a treat that even the most jaded adult camper would fall for. So we headed into the test kitchen to create S'mores 2.0.
We were a little ruthless. We nixed the graham crackers altogether. Then we nixed the bar of chocolate. And in place of both, we created a graham-flavored, chocolate-dipped cookie. These things are moist, thanks to a healthy dose of honey and brown sugar; packed with cinnamon-graham flavor; and have a thin chocolate coating that melts perfectly when toasted marshmallows are sandwiched in between them. They freeze beautifully, so you can pack them in the cooler pull them out at the campfire.
