Now that's considered a bargain. If you haven't noticed, $30 per pound seems to be the going rate, and lots of establishments are listing it by the 1/4 or 1/2 pound increments so there isn't as much sticker shock.
So, are these restaurants being greedy? Nope. Demand for brisket is at an all-time high and for every bovine, there are only two to tango. Add in reduced herd numbers and higher costs for feed, and it's an equation that makes it a necessity for restaurants to boost up the brisket price.Most barbecue restaurants pay about $5 per pound for choice grade brisket from food providers.
A true 12-pounder would sell for about $300 if it held true, but there are many factors that cut into that profit margin. Briskets must be trimmed. They come with a lot of hardened fat that will not render if it isn't removed. "We try to use our trimmings for other menu items to cut the cost down, but there is no doubt that you have to account for the waste," said B.R. Anderson, owner of B-Daddy's BBQ in Helotes.The board at B-Daddy's BBQ includes coleslaw, regular and jalapeno beef sausage, beans, pork loin spare ribs, pulled pork, chicken quarter, creamed corn, brisket and turkey.
