I’ll level with the minimalists here—most specific-use forks are a scam. Do you really need a shorter, narrower fork to eat salad when those leafy greens are just as easy to spear with a? And is it really practical for any home cook to keep a set of oyster forks around? Probably not. But I’ll make an exception any day for a sardine fork. These squat utensils—an invention of the Victorian era—are barely longer than a sardine tin, and they have short, curved tines in a wide setting.
As I know from using my own yellow Bakelite handle sardine fork, the shape of the tines is perfectly designed for gently cradling one of these slippery fish and transporting it to a plate without the sardine falling apart into fragments on the way. It also gets the job done gracefully with fillets of, flaky pieces of ventresca, and juicy mussels. When I settle into a snacky dinner of bread, butter, pickles, and tinned seafood, it’s the best tool for the job.
